Ok, is birch a good wood to smoke the striper?

I don't have any alder. Would you say that 3 ounces id about right? Has anyone wrapped the fish in bacon when smoking?

How about striper? anyone have a personal smoke with this?

Birch is nice and light and should be fine.

Wrapping in bacon would be fine also.

You could go to the search for trout and find several appropriate approaches.
