I smoked mullet and cobia for many years on a offset smoker with unbelievable results. I recently switched to the CS. Mainly because my offset finally rusted out, and it is time consuming to keep watching the temp. However I have not been overly pleased with my end product in the CS. I try opening the door every 1/2hr or so to let the steam out, but I am still not getting that great dried smoked fish taste. I think it has to do with the high humidity levels. Is there an attachment that will dehumidify the inside of my CS?

At first I had the same problem with salmon. The moisture would pool up just under the skin. I wound up cutting slits in the skin with a razor blade.

I see you are from Fla. I used to fish a bit in the Big Bend area (St. Mark's, Steinhatchee). There was a place down there called Posey's that was famous for smoked mullet.
