When passing through the Brainerd/Niswa, Minnesota area today, I stopped at Morey's fish shop. They do a lot of smoked fish. Of course I had to pick some up for the four hour trip back here to N. Mankato. This time I found what they called "Cajun strips Salmon". They were thin slices or fingers that had been smoked and had some sort of Cajun spices heavily applied. Needless to say, everything was consumed before I got home. They were not as dry as jerky, but not wet and oily either. They were fantastic. Do any recipes or ideas come to mind?

They also had some cream style pickled herring with Lingonberries that were terrific (heavy on the were).
