A buddy dropped off a bag full of fresh blue gills caught today and wants me to smoke them for us to enjoy. I've done buts, briskets, ribs, but no fish. Any ideas or good recipes?

Try the Recipes link located on the black link bar across the top. Or search other white fish recipes in the recipe forums. Try some brined, some straight to see which you like best. I also like to finish some smoked fish on the grill.

Wow.. I wish I had just one of them critters. I'm in the process of carving one (out of wood) and need one for reference. We don't have them in any of the lakes that are close by. I've only carved two fish so far.. you can see them at my picture site.. www.picturetrail.com/chips. I believe the fish are under "Latest Carvings". The B'gill I've started is about 8" long. The shape is easy but the details of the head/gill plate area are tougher if I want to do it right Smiler

Anyhow.. I'd probably sprinkle some cajun spice on it and go for it with a mild wood.

Some friends of mine prepare them with a little butter & lemmon pepper and use hickory in the wood box. I personally still prefer fried panfish.

Smokenque, I can't mail you a real bluegill but I've got some nice quality pic's I could send you of a 1 1/2 pound bluegill we caught a couple weeks ago if it would help you.
