Any suggestions on smoking Halibut? I searched the recipie archives and didn't come up with much. Is it any good? I have some Salmon going on today and also have a couple nice Halibut fillets I'd like to smoke up. Thanks in advance!!

Halibut is a wonderful fish!!! It smokes great treat it like salmon that you have not brined . Put it in around 200 degreed and LIGHT smoke until it flakes. It is a very light tasting fish and it�s easy to over do the smoking.

Or season the fish and cook at 225 till done with out wood you will get a bit of smoke taste just from the cookshack unit itself.

I actually ended up brushing on a Dijon/Honey glaze, putting it on Kabobs with muchrooms and zuchinni and grilling it as my smokette had a full load of Salmon and Pheasant.
