Nick Scull emailed me about anyone in Florida that smokes our local species,i.e. dolphin,wahoo,cobia and snapper.
I threw away most of 10 lbs. of dolphin that I smoked last fall.It tasted like "nothing",as it is a mild fish. Texas Kingfish is on the Gulf and a fisherman.He smokes all the locals and has posted his snapper recipes. Bobby Que and a couple of folks in the Tampa area smoke a lot of fish and they'll be happy to share.We even have long mullet threads. RNAT down in key Largo and i2bbq up in Gainseville do a lot of fish, also. Sunshack down in Naples does fish,as well. We have guys all up the coast through Brevard,up to J-ville. I see a lot of wahoo smoked locally,but I have not done any myself. Andi,up in Moose Pass is our " Queen of the Fishes" and our ultimate resource on many finned friends. Ask some questions and all that bunch will jump in. As to Florida gatherings,there is the 3 day RIBMANIA at the ballpark there in Jupiter Mar 8-10. There are 4 minor league games in 3 days,a big money cookoff and vending by many Q teams and restaurants. They are advertising 30,000 people for the weekend. Orlando Bike Week is that same weekend and the Florida Barbecue Assoc. is having a cookoff at the Harley-Davidson dealer. There are several more sanctioned contests this winter and you can go to Google and ask for the Florida Barbecue Assoc. for all the info. Winter Park will be in a few weeks. Hope this helps some. |

There is a lot of smoking and pickling of fish in this neck of the woods because of all our lakes and rivers. Also, if you go 80 miles south of here into Iowa, they can probably give you great recipes for the Iowa Walleye (Bullhead). Happy Valentine's Day.

Hi Tom,
Wahoo is a favorite on my smoker...any firm fish is quite good on the smoker but i always spice it up a little (have also done salmon but they ain't on my boat) I either use a blackening spice or lime juice, ginger and barbecue sauce (add the sauce in the last 1/2 to 1 hour) for a 2-3 hour smoke.
