Can anyone advise me on making finnan haddie using the cold smoke baffle. I could use some advice on a brine and how to cold smoke. My smoker is just in. Own a retail fish market. Any other seafood recipes would be appreciated.

Try 3men.com. They have pages on how to smoke fish.They recommend hot smoking but you are the fish expert.It seems to address alot of issues though
