I just came into a whole 20 pound case of Orange Roughy. I was wondering if anyone has ever smoked any in the Smokette?

Not roughy, but redfish, red snapper, and trout do a search for redfish or red snapper there is a recipe that I use posted.

I've hot smoked them like catfish with some cajun spice at around 180� for less than an hour.
Mine were fillets and I cooked to the low 150�s. They were good as a meal,but can't help you with a slow hard smoke for snack food. |
