We generally smoke salmon filets for 2 hours at 200. Any suggestions for times and temp for smaller trout filets would be appreciated.

I have never done trout filets, however I smoke whole trout for 1 hour at 200.

I'm preparing smoked trout & watercress on tart apple slices for a sparkling wine tasting event tomorrow night.

What kind of wood do you think I should use? I'm thinking some kind of fruit wood....
