I smoked albacore and then put it in 1/2 pint jars. The first case of jars I just packed fish, the next three cases I packed with 1/2 teaspoon of peanut oil in each jar. The peanut oil batch is definately better, the other one was dry. Later I read in my canning book, there I go reading directions after the fact, I should have put 1 tablespoon of oil per 1/2 pint. Has anyone else tried canning smoked fish??? Any help would be great.

Did you ever get a hold of Andi? She is a wealth of info. Not sure if she did any canning...you can find her e-mail on some old posts here on the forum.

I did receive the recipe... I could not send you a reply through this. I haven't tried it yet. I will be going to the Winter Nationals (?) drag race this weekend to do a fish BBQ for the boys. My husbands brother is on one of the teams...I will be smoking fish on Friday to take, I hope it comes out!!! Been fishing lately??? How bout that protest!

Good luck this weekend, hope the weather improves. The fight for our fishing grounds continues, it ain't over yet.

Are you getting the hang of using your smoker? It's pretty much load, set and forget until it's done. Knowing when it's done comes with experience and a good meat thermometer. I'd be interested to hear how your first batches go and what your impressions of the Cookshack are, so post away here as you find the time.

Your right our fight is not over!!!

My husband and some other Captains went on a goof off with Mike on the Big Game 90... they heard the albies were biting on the way to the Lupe so they turned their rockcod trip into an albie trip... needless to say my husband caught 27 fish... and I have been smoking since yesterday morning. I canned 3 cases..UGH... I have 2 more loads to smoke when I get home. I haven't canned anymore smoke yet. The last batch I put a teaspoon of peanut oil in it... haven't opened one to try it yet.... Do you know what oil is best for canned fish? Take care and tight lines!

Wow, sounds like they had an epic trip. I would go with olive oil. All the best canned Italian tuna is packed in olive oil.

Thanks Rude Pete! I will try some olive oil ... how much do you think I should put in a 1/2 pint jar? I put a teaspoon and that fish just sucked it up!!! I guess it is trial and error... only I would like to learn from someone else error! I am going fishing down at Lupe for Thanksgiving, I'll let you know if I'll be smoking. There's not to many fish smokers here huh...
