If I were you, I would search the forum archives and find things that appeal to YOU. If you decide to experiment with anything you find in there, take good notes so you can duplicate your successes and refine what does not suit you. That is the best way....teach yourself. You can also do a search for any of the catagories you mention in your post. Believe me, you'll spend hours reading and salivating.

Kind of a vague request. You'll get more reponses if you have a more specific question.

I'm not sure where to go: sprinkle dry seasonings/herbs; spread a paste with dry and liquid seasonings; marinate to infuse flavor and even tenderize; brine to add moisture to lean cuts, can add seasonings for flavor too.

It all depends on the meat, its flavor, composition, delicacy, etc.

sean, welcome to the forum.

If you're in Nigeria, guess the first question would are you going to be smoking or grilling? Totally different techniques. Since we're primarily into smoking we can help, but we've also got great grillers here.
