My neighbor just brought me a boat load of green peppers. I did a search for a receipe, no luck. anyone have any ideas for smoking green peppers? Stuffed? Thank you

We make these all the time.

ground beef or mixed with fresh pork
tomatoes chopped fine
cooked rice
1 tsp cumin
1 tsp ground pepper
bread crumbs
salt
1 or 2 eggs (to bind)
uncooked bacon stips

Mix the above amounts measured to fill the peppers. Remove tops of the peppers and cook in water till 3/4 done. Cool and stuff with the above meat mixture. Dabble tomato catsup on top, sprinkle with sugar and then place bacon on top of that - crossed. Smoke until done (155 degrees or 165 if using pork) with two oz of wood.

For stuffed grren peppers in the oven, I use a filling that is very similar to Smokemullet's, except I add some tomato soup concentrate (campbell's from the can, not diluted)to make it a little moister and some shredded cheese (usually mild cheddar).

Also, A friend makes stuffed poblano's using a filling similar to what he uses for ABTs and thay are great! You could do the same with sweet green pappers, also...
