If God did not intend for us to eat animals, why did He make them out of meat?

The Smokin' Okies won People's Choice at the 2006 Bricktown BBQ Contest. Smokin's 'que was fabulous, but Mrs. Smokin's potato salad got lots of attention, too.

She was generous enough to share her recipe with us:

  • Wash and bake potatoes until done. Cool, peel, and cut into bite size chunks. Set aside.

  • Mix lite Helmann's mayonnaise, chopped dill pickles, diced onions, dill weed, dill seeds, celery salt, celery seed, salt and pepper, yellow mustard, and enough dill pickle juice to make the mixture creamy.

  • Fold the creamy mixture into chunked peeled potatoes.

"I don't measure anything I just make it to my taste," says Mrs. S.

This looks like one to try.. but, for a 'non-chef'.. I'd love to have an idea on the amounts.. even a hip shot.. Smiler

I took a shot at Mrs. Smokin's potato salad this weekend. It was one of the best potato salad's I have eaten. It took some experimenting to get the correct ratios of ingredients, but here is my list:

6-8 large baking potatoes
1 30oz jar of Hellman's Lite Mayo
5 chopped kosher dill pickle spears
1 small diced onion (I only used about half since my wife doesn't like a lot of onion.)
1/4 tsp of dry dill weed
1/4 tsp of dill seeds
1/2 tsp of celery salt
1/4 tsp of celery seed
1 tsp of fresh ground black pepper
1 tsp of kosher salt
1/4 cup of yellow mustard
2/3 cup dill pickle juice

pour creamy mixture over chunked potatoes and let stand in refrigerator a couple of hours prior to serving. It was awesome!! I hope these amounts help other cooking dummies like me.

I have eaten the original version made by Mrs. S. and it is great, but I'm a little timid about just throwing things together and I can't wait to try it now.

Amounts? Amounts? Haven't any idea nor does she. That's why she doesn't help with the Q'in rubs anymore.

Maybe next time she makes it I'll watch and estimate.

i have had a few of the smokinokie family recipes on this site and all are great iam sure this will be awsome also i will try this one soon as my mouth is watering again and ty smokinsteve for taking the guess work out of it hehe

The beans everyone likes at the contest when we won People's Choice are the same one's I've posted here.

I smoked about 12 butts for the people's choice and put 5 pans of beans under them and the beans got REAL happy.

So you got 2 of our favorite recipes.

This is pretty close to a recipe i have used for years but is missing the secret ingrediant and that is to put 2 tbs of bacon grease in the creamy mixture. I have always used the smokey bacon for mine.
