About a year ago I was traveling through Carolina at lunch time so I stopped at a "Q Shack" and had a sandwich. The sandwich had cole slaw on it and was one of the best B Q sandwiches I've ever had. I have tried to duplicate the cole slaw recipe but been unable to get the taste right. I feel like the slaw would not be good used in the conventional way. Thanks ahead if anyone can help me with the cole slaw recipe.

Here are a couple that I copied a couple of years ago. They're not mine but are pretty good. The third is one of my favorites and it's gotten lots of good comments.

3 cups chopped red cabbage
3 tbs minced white onion (can substitute scallions)
1 small carrot - grated or thinly sliced
3 tbs cider vinegar
3 tbs mayonnaise
1 tbs dijon mustard
1 tsp worchestershire
1/2 tsp sugar (adjust to taste)
1/4 tsp salt
1/8 tsp celery seed - lightly crushed Ground black pepper to taste
Dash or 2 of hot sauce
Mix everything together in a bowl, cover, and refrigerate for at least 1 hour.
Serves 4.

1/4c olive oil best you can get
2 Tbs white balsamic vinegar
1/2 tsp oregano
1/2 tsp basil
1 tsp salt
1 tsp black pepper
1 Tbs sugar and here you can experiment on the sweetness level
1/2 small head of green cabbage
1/2 yellow bell peeper chopped
1/4 red onion fine julienne
just do the standard mix and taste but I think
it tastes better on the 2nd day

For Sauce, stir together and set aside:

4 cups BEST FOODS (Helman's) mayonnaise (don't substitute any other kind/brand if at all possible)
4 TBS sugar
5-6 TBS cider vinegar
1 1/2 TBS salt
2-3 tbs dry mustard
1 t celery seeds
* except mayo, ingredients are approximate and to taste

Prepare: 4 1lb packages of shredded cabbage and carrots
1 diced green bell pepper
1 diced red bell pepper
1 cup finely diced white onion

Combine all ingredients, toss well and chill for several hours before serving.

KFC slaw is the best on BBQ sammiches, im my opinion. I just drive through and buy it, but there are several versions of the clone recipe on the internet if you search google.

I like the KFC dressing but not the way the way they mince up their veggies. I use the packages of slaw from Sam's. I also almost double the amount of veggies to dressing. Here's the link for the KFC slaw.

This is also from Hellman's but uses lemon juice instead of vinegar.It is good.

1 cup Hellmann's® or Best Foods® Real Mayonnaise
3 Tbsp. lemon juice
2 Tbsp. sugar
1 tsp. salt
6 cups shredded cabbage
1 cup shredded carrots
1/2 cup chopped green bell pepper



In large bowl, combine Hellmann's® or Best Foods® Real Mayonnaise, lemon juice, sugar and salt. Stir in cabbage, carrots and green pepper. Chill, if desired.

there is a commercially made dressing from Hendricks out of Missouri. You can get it at Homeland and I think at Wal-mart but nto sure of that. It is sometimes in the specialty section.It is sweet/sour with lots of black pepper and made with cider vinegar.Fat free

I made the one from recepie site that ezgoin refers to it is supposed to be a KFC knockoff. Man it was Awsome. It was really better after the second day.

I also use the KFC clone, except I don't mince up my veggies like they call for.....I mean....I like to use a fork and get that CRUNCH!!

Oh yea..."ditto" on the Miracle Whip!!!!!

My dos centavos here..."I" think you need to 'wilt' the cabbage before you sauce it up to get rid of both the sulpher-y flavor (even if slight) and the 'too-fresh-crunch.'

Wilt: salt, colander, time, rinse, dry, use

I'm going to agree with Baltimore and disagree with Thousand. I like my slaw crunchy. I buy a head of cabbage and chop it with a knife into pieces about 1/2" square.

It's all a preference thing.

Might also be sort of a regional thang. We like the grated consistency for topping sammiches.
