Someone once asked for a recipe for a smoked salmon as a main course.
B B Q/Smoked Salmon Brine 1/3 cup Soy Sauce 1/3 Cup White Wine 1/3 cup Peanut Oil 1 tsp Prepared Mustard 1 tsp Garlic Powder 1 tbsp Brown Sugar 2 tbsp Parsley Add Lemon to Taste Mix the above together in a jar with a lid Shake it well and let blend for several hours or overnight. Lay the Salmon flat in a brining dish and pour the brine over it Let the Salmon brine for several hours or overnight. Note; 24hrs is better. Turn the fish over once half way through the brining time. Remove fish from brine (no rinse, no dry) and cook it until it easily flakes apart. For extra brine flavor save the remaining brine, simmer it for about 10 minutes, then spoon some of it over the fish before serving. |
