This is from "Ribs" by Susan Friedland, and one of my favorites!
Marinade: 2 Cups cider vinegar 2 teaspoons fresh ground pepper 4 teaspoons salt 2 Tablespoons brown sugar 2 Tablespoons chile powder 2 Tablespoons dry mustard 2 teaspoons paprika 2 teaspoons toasted ground cumin seeds 2 Tablespoons honey 6 lbs spare ribs Combine marinade ingredints in a screw top jar and shake vigorously. Marinate ribs for 4 to six hours. (I use the GRANDE zip locs) Cook ribs. You can bring the remaining marinade to a simmer and use it as a basting mop or at the table...although most of the time I'm too lazy and just cook em'. Enjoy, and if you try this recipe, post some feedback! P.S. for the cumin seeds, place them in a frying pan over medium heat until they start to get aromatic (DO NOT BURN). Crush/grind in mortar and pestle or coffee/spice grinder. Roger |

I'm usually not much for marinating most pork products,but I'm always willing to learn, if it makes better Q.I just trimmed down some spares to wind up with about 13lbs. of St. Louis cut ,which I figure is about all I can cram into my Smokette.I'll dry rub them tonight,and try them late tomorrow morning.
