I smoked some ribs today using a spice rub I found (Steve Raichlen book). Its a simple spice rub that doesn't require alot of work....so here it :
1/2 cup celery salt 1/3 cup pprika 1/3 cup dried garlic flakes 3 Tablespoon freshly ground black pepper I smoked the ribs for 4 hours & 45 minutes at 225 degree (I didn't preheat the smoker), used only 2 oz of hickory with 1 charcoal chunk, used the hooks to hang them (I cut 3 slabs in half)and marinated the ribs overnight. By far this is the best spice rub I have found to use in my model 50. Also, I decided to use a Hungarion paprika I found at a spice store (I was using the Costco McCormick paprika) and I found it made a big difference. The ribs had a very pleasant color when finished (not the dark black color) and it really didn't need any bbq sauce. I think this spice rub is well worth trying. |
