I usually use this for turkey but it is great for all meats and works wonderfully. It will produce the juiciest turkey that you have ever had:

Master Brine Recipe for Meats:

10 cloves garlic, minced
3 quarts water
1/2 cup kosher salt
1/4 cup black peppercorns, plus
2 teaspoons black peppercorns
1/4 cup sugar, plus
2 teaspoons sugar
1 1/2 teaspoons dried thyme
1 teaspoon whole allspice
1 bay leaf

1 recipe Change size or US/metric
Change to: recipe US Metric

48 hours 15 minutes 48 hrs prep
Bring all ingredients to a boil in a large saucepan, reduce heat and simmer for 15 minutes.
Allow to cool completely before using. You can use a large sealable bag but since I also smoke a very large turkey, I use a large plastic tub. I hope that you all enjoy this as much as I do. Cool
