Please enter this in the recipe contest next time the category is "Strange Concoctions" - it's actually pretty good.

Got home last nite at 8:55, no time to go to the store, not much food that struck my fancy other than a couple of tomatoes from the garden and what was in the freezer:

1 c frozen peas
3 oz smoked trout filet
2 small tomatoes
1/4 cup canned roasted red peppers

Cook peas per directions. Thaw fish if frozen, then flake. Chop tomatoes and peppers. Mix together thoroughly. Season with a few grinds of black pepper and a dash of salt if needed. Enjoy!

Option: Dress with a tablespoon of top-quality mayonnaise such as Duke's mixed with a dash of Dijon mustard.

Sounds pretty dang good to me, TJR! Mix that up with some hot white rice and chow down!

Right now I have 24 Red Salmon fillets all glazed up with a fan on them. I have pics! Wish we could put pics on here w/o such a hassle! Big Grin

Good suggestion, and there was some rice in the cupboard. Bet up there you still have fresh peas, too.

Yeah, fresh peas in the can! Didn't grow any and the market sells the same vegies in summer as in winter. Broccoli, cauliflower, zucchini, acorn suash. That is it. Have to go far far away to score anything different!
But! I have a ton of tomatoes ripening right now!

(My fish is the BEST I have ever done in 30 years of smoking fish.) Razzer
