hello all. i have opened a restaurant, and bought a sm160. When i bought it, it came with chunks of wood. those ran out, and my suppliers quit carrying them. they told me pellets are better. I have now also bought a sm350. My question is this. are pellets fine, if so, how much do i put i in the firebox? it seems like they burn fast. i would like to try and get 4 hours of smoke, so should i open box and add more as i cook?

I second that. Chunks have much better burn time and also smoke (pellets obviously are surrounded by more airspace). You can also find other sources of wood chunks, like Lowes, Home Depot, Grill shops, on-line, etc. And you can always get logs and cut your own :-)
