I did 2 flat briskets last night while I slept at 225* --both were done in 10 hrs and just melt in you mouth. I've been experimenting with several rubs and they are all good on the 008.

Can't wait to do more!

I can't say I disagree...brisket (at least in my world) is the king of the low and slow. Done right, there are few other items that really are as pleasing!
