As with most good food, good raw ingredients are critical. I have come upon a wonderful resource in Boston for prime brisket. The name of the place is Boston Brisket Co. located at 42 Newmarket Square, Boston, MA 02118. Their telephone number is 617-442-8814 and their fax is 617-445-1105. They will ship anywhere in the US. Ask for Fred Sneider or Jack Epstein. Their prices are very reasonable. Tell them the guy with the Corvette sent you.

Okay, unsoliticed recommendations about someone who can sell me a Brisket.
What KIND of brisket? Packer? Is it indeed Prime (hard to find, but it's there) has it been aged? Smokin' |

Jack tells me that he carries choice, select, and prime briskets. Your choice. Prime has the right amount of fat for me. All of his briskets are packer briskets, 120 trim. He ages his briskets for at least two weeks, but would like to know whether your interest is in wet aged or dry aged brisket.

Wow, I live in Boston and I didn't even know about the place. Finding a packer cut brisket around here has been tough for me, but I'll definitely give them a call. They're over near the Mass Ave/I-93 intersection right?

They are just off of Mass Avenue in South Boston in Newmarket Square. Give them a call and they will give you good directions. You will want to call first to make sure that they have the cut of brisket you want. They do not always have prime.
