I did a 5 pound brisket this afternoon. No smoke ring but it sure tasted great. I love this little smoker more and more each day.
My wife doesn't like smoked foods, maybe I am using the wrong wood or too much.

Now, around here, a 5lber isn't really a brisket, it's trimmin's Smiler Sounds like you had just a flat, and they're usually hard to cook because they don't have much fat, so enjoy the success. We've had recent posts about those who didn't do as well with flats.

As for Smoke Ring....now you're hitting on a Smokin' topic. Do a search for smoke ring, it's been discuss often in the forum.

They had some big cuts but I got the smaller one just in case I blew it. Also it is just me and the wife. Congrats back to you on you and your sons recent success. I know you are smiling from ear to ear.
