Im in a bbq cookoff and one catagory is brisket. The rules say it must be cooked with charcoal and the cooking time is only 5 1/2 hours at max. how do i cook this brisket quickly but still be jiucy and tender

Sounds like you need a Orion Cooker if you are going to try cooking a brisket in 5 1/2 hours.

You can do it, you'll have to go to 275 to 325 and watch it like a hawk.
