hi
i have one large brisket in my 150 going on 9 hours internal temp is holding @174 cooker is at 228 for the last hour plus- will it go up?
checked with an instant read therm as well- been a long day and hoping for good results

Yes it will mine will take as long a 18 hours just let it cook Smiler

Like boznad says,let 'er cook.

At that temp,large ,trimmed out, choice packers

take us about 70 mins/lb to finish in a 150.

You could crank it up to 250º-270º,if you are behind schedule.

Hope this helps a little.

That should do it.

If you were really behind,you could foil it with a cup of beef stock,crank it to 275º+ and it will finish nicely @ 195ºinternal.

Let it set under a blanket,etc for an hour,or so, and you are good to go.

I have used my SM150 twice now.

This is from my first time.
Start time 6:00 pm
Temp 225
Probe temp 190
3 oz hickory
2 oz apple
1 oz cherry

4 briskets Angus Choice 11 lb, 11.5 lb, 13lb and 13.5 lb
Rubbed with Cookshack Brisket rub
2 pork butts 9 lb each.
Yellow mustard with Cookshack Spicy Chicken rub and rib rub.
Butts on bottom rack fat side down.
It was done at 12 hours.

3 hours in to this oven temp reading is only 187 set for 225
Top rack 11 lb. brisket temp reads 145
2nd rack 13.5 lb brisket temp unknown
3rd rack 11.5 lb brisket temp reads 131
4th rack 13 lb. brisket temp reads 125
5th rack pork butts no probe

5 hours in to this oven temp reading is only 187 set for 225
Top rack 11 lb.brisket temp reads 170
2nd rack 13.5 lb brisket temp unknown
3rd rack 11.5 lb brisket temp reads 165
4th rack 13 lb. brisket temp reads 174
5th rack pork butts no probe

6.5 hours in to this oven temp reading is 208 set for 225
Top rack 11 lb. brisket temp reads 174

3rd rack 14 lb brisket temp reads 143
4th rack 2, 9 lb. pork butt no probe.
5th rack 2, 9 lb. pork butt temp reads 151


5 hours in to this oven temp reading is 222 set for 225
2nd rack 15.5 lb brisket temp reads 145
3rd rack 14 lb brisket temp reads 156
4th rack 2, 9 lb. pork butt no probe.
5th rack 2, 9 lb. pork butt temp reads 171

Sorry I was too busy with my sides and bbq sauce to finish the log

12.5 hours done.
briskets were 190
bottom butt was 205? 195 is better

Once the food is done I take out of the smoker and double wrap in foil and put it into an ice chest for a couple of hours.

Good luck : )

FYI my Smokette and Amerique both take about 16 hours.
SM150 in Brisket mode so far has been 12 to 12.5 hours.
Smoker 3/4 full or more seems to cook better.

i just cut some- i let it sit for an hour in foil and cut a piece
will give more results in the AM
