A little help please. It has been quite some time since I used my Smokette. I have to cook 4 pork shoulders over nite. The question is...they are on the small side-about 5 lbs. each. Does anybody have a good idea as to a time estimate? I plan to cook them while I sleep and don't want to overcook them. Thanks

From what I have read here in the forum, use your largest butt weight to guess the time and hold the probe. Put the heaviest on the bottom so it gets a bit more heat. Here is a link to the same discussion...

PopaJack - Your over-night cook should be fine. As mentioned above, get that largest butt done. I did 3 butts a couple of weeks ago and did fine on the over-night cook. Just for my own personal preferences, I set the temp at 200 for the night cook and after checking the internal temp in the morning, crank it up to 225. As for time, I never go by time any more. I always shoot for internal temp. I used to go for 190-195. Lately, after reading posts, I go for 200-205. There's much less fat to deal with. As I approach the 190-195 mark I make sure to mop with SmokinOkies finishing sauce. Gawd it's good! Just can't beat it!

I agree with Wheelz about starting small butts at 200� for an overnight.

If you think 2 +/- hrs/lb,they could be done awfully early.

As a practical matter,I find the smokette cooks a little faster and more consistent when full.

What time do you want them in the morning and what time do you want to put them on at night?
