There are caterers/vendors that may score them all over about 1.5 inches deep toss them in the rub tub,into the cooker about three hrs,pull out, plastic wrap and foil cook another couple hrs.Toss in the hot boxes until ready to pull at serving time.
When behind on time and 2-3 cases to finish before the crowd arrives,some swear by it.
