When I smoke my Butts on my AmerQue or BGE they always comes out with a crusty "bark". I was just watching a food network program where Bobby Fley had a throw down cook off with a great looking chick from North Carolina who is famous for her pulled pork. She won. And her butts (pork, that is), cooked in a wood fired smoker, never had a bark on them. So, why the difference?

#1 - Don't watch Bobby flay.
#2 - Butts are supposed to have bark on them. Are you sure your color or something isn't off on your TV ? A pork butt done in any smoker will naturally have a dark 'crust' or bark formed on the outside of the meat. Did Bobby flay or the pretty North Carolina gal say it didn't have a bark on it, and did either say why not ? WHOOO PIGS SOOOEEEEEE !!! |

I didn't see the episode, but bark is a function of rub, smoker and duration.
I wouldn't worry about what she did for BF, but your own succes. You happy with your stuff? If you wrap early, bark will be minimal. |

My butts taste great. I was just curious as to why the difference. And the color on my 65" plasma is just fine.

Without seeing it, I can't say, but I have a 75" in the game room for the Olympics and PlayStation and 67" in the living room.
I'll watch for that one, but if it didn't have a visible one, it could be how they edited it, how she made it, wrapped it, the rub, a 1000 things. Me, I like a lot of bark on my butt. |

That's a short version of the episode I'm talking about. Her finished butt has a golden brown color that is much more appealing to the eye than the black crust on mine. Mind you now, the crust on mine taste fine, just not as nice looking. Thanks for the video link.

Cut that crispy bark up with meat scissors and mix it all in with the rest of the pulled pork. You will be glad you did. Tell 'em some big goofy Arkie told you to do it that way. p.s.
