I promised to smoke butt for the church picnic and today the "church Lady" dropped off 90 lbs of Hormel "Always Tender" Pork Butt. I was reading about these particular butts on another site and the comments were not good. Hormel injects the butts with a 12% water & salt solution and the results are "hammy" meat. Hy-Vee has the butts on sale for $.99 so the church got a great deal.
Has anyone had any experience with this brand of butt and if so what can I expect? I usually rub butts with cookshack rib rub overnight, but I'm concerned that a salty rub like this combined with a salt injected meat will not end up good. Can I use these butts and produce a fine product or should I work on getting different butt for the church? I always have great luck with the butts from Sam's. My plan is to smoke this weekend. I think you are ok.
I'd just put my rub on a couple hours before you go on the cooker,and cook like usual We've cooked cases of injected,even Hormels,and been fine. Good Q 2 Ya,Tom. |

I won't mention any names,but one FEC cookteam was particularly strong using the Hormel injected loinbacks.
He was top five MIM,and a top FBA/KCBS cook. Another fine cook that cooks all Tx circuits,swears by their spares. Good Q 2 Ya,Tom. |
