I cooked 4 pork shoulders last nite and they turned out real good. I cooked them in my smokette at 225 for 14 hours and they finished at 200 internal temp. I have to cook 6 more tonite and I can't find the meat...all our local stores seem to be low on it. But I found Boston Butts. Are they the same piece or meat? Please respond soon as I have to leave and go buy them to get them in the cooker soon. Thanks

Basically ,yes for your purposes.
The butt is the upper part of the shoulder and the picnic is the lower. Most cooks would rather cook and pull the butt. Shoulders run about 16 lbs and butts around 7 lbs. Thus, it often takes longer to cook a whole shoulder. The picnic is usually thought to be a little hammier with more tendons and connective tissue. It is usually hard to find whole shoulders. Sometimes they call butts" shoulder blade roasts",which means the blade bone in the butt portion. Hope this helps a little. |

Thanks Tom, I'll take that as a yes...that butts are butts, whether called boston or not.
