Peoples,

Put some buckboard bacon down Wensday, 4 butts in a meat tub covered with plastic wrap. Took them down to the local grocery store and put them in the beer and pop cooler. The plastic wrap came off and with the fans blowing in there, there was almost no liquid in the tub. They should have been swimming.

Should I
Add more water
Add more water and rub
Leave them alone

I have since put them in a 5 gallon bucket with a lid

Leave them alone and continue per the instructions.

I'd guess after a while they'll start to get juicy again since the salt concentration would be pretty high.

Ive done a few lately and all have been damp but not wet. No liquid in the tub. Got 14lbs to do tomorrow. Big Grin
