I put a 8 lb spiral sliced ham in the 08 for Easter. I used 1 chunk cherry & 1 chunk apple. Set @ 250* & let go for 2 1/2 hrs. I then glazed & put in 250* oven for 35 min. This was the second one i have done. the first had 1 pc pecan & had a light smoke flavor, yesterdays ham was a little on the strong side. I wonder if it was the amount of wood, or that apple & cherry are a little too strong for ham.--

Depends on the size of the chunks. The amount of smoke is very subjective in that some really really love alot of smoke, and some like it light. 2 Cookshack chunks might be alot for an 8 pound ham. I am curious as to why you finished in the indoor oven.
