I am building a out door kitchen and am looking to build in an electric smoker but have very little info on them since I have only really used my offsets and the occasional bullet smokers. I need advise on the best thermostatically controlled smoker that I can build in to my outdoor kitchen It does not need to be real big I have a real big smoker when needed. I just need something to do an occasional weekday brisket or butt while I�m at work. I have looked at the cookshack smoker but am not sure I could get an entire brisket on there it is only 14�x14�. Please help

A 9-10 lb. packer will fit diagonally on the smokette racks.

I have done up to a 14# brisket but you have to fold the tip under. Its crowded but it works and as always, tastes great.

I know some say not to, but I've always cut the flat from the point, and smoked the flat on the top shelf, and the point on the lower shelf.

I've never had a problem doing it that way, and they've come out great.

Dan,

Are you wanting to build design your own electric smoker? Reading the post, it sounds like that. You've got replies about a brisket will fit. Don't know that many people here have been building their own electric smokers, can't say it's even come up.

FWIW, there are two new CS Smokettes on Ebay, an 008 and an 009. I didn't try to compare prices but shipping is stated as $45.. This guy looks like a reseller of some sort.

I think Cabela's has the best price @ $400 including shipping for the 008 and $50 more for the stainless model.. I think this ebay price would be a wash as you have to pay that additional shipping. And, with Cabela's you have a good company with a good return policy. That's where I got mine..

However..

I built my second smoker years ago.. My first was a Lil' Chief which I still have somewhere in the basement.

The homebuilt smoker was easy to build and required a bit more than one sheet of plywood, some sheet metal and a kitchen hotplate.

I built the box with a removable front door, but should have hinged it. I lined the box with sheet metal only because I had it. Plywood interior would probably have been fine. Painted it black on the outside.

Put wood in an old frying pan on the hotplate, put a hubcap on top of that and cranked er up. The temp was controlled by the rheostat on the hotplate. This was an old laboratory hotplate and had a "0-10" setting.. not low, med, hi.. or on/off Smiler

I found a place that sold old stove parts and got four oven grates for the interior. The adjustments were made by puchansing some of the adjustable shelving components from a hardware store. That was not as easy as fixed shelves.

I didn't really need to do the adj shelving as the spaces were wide enough for chicken, chops, and mostly jerky. I did a lot of hunting and fishing and venison and smoked fish, including shark were the mainstay for that box. I gave it away when I got married and had to move... but it sure worked well. Back then I knew nothing about rubs, etc. Used a lot of Lowry's and soy sauce..

If you enclosed something like this inside a cabinet.. it might fit with what you have in mind for an outside kitchen.. fancy or plain as you like it.

BTW, there is a person on EBAy who is also selling plans for making outdoor kitchens.. didn't look too closely at it.. so it may be a fit or not..

Thanks for asking... but, no.. If I ever go out for surf fish.. they smoke great in the LC.. and they go great with beer... oh yah !!

Dan I built my smoker out of a old frig. I have just done some updating on it and so far its great. I make alot of smokies and smoked sausage, but it works great for ribs, butts and brisket. If you would like more info let me know.

Cabelas is were I purchased my 008, best price, great company. I order hundreds of dollars of products from them every year and have never had a single problem.

The grates are square. You can't fit a brisket straight left to right or straight front to back, you need to angle it corner to corner.

Hope that clears it up.

At least go with the 55 model i have it and it great and had it for years with no problems you fold a full brisket and it fits fine and good finished product
