I went looking for Tenderquick today and all the local stores that carry it were out. I did see something I've never seen and was wondering if anyone has any experience with it. It is Morton's Smoke Flavored Sugar Cure. It comes in 7.5lb bags, is found in the spice section where TQ is normally found, and it says it is used for ham, bacon, etc. It has hickory smoke flavor added, so would this not be overkill if used with my Smokette?

BG,

Sugar Cure is used with long curing products.
Like country hams, dry cured bacon, etc. It releases the nitrite at a much slower rate.

Hope this helps
