I WILL BE PICKING UP MY SMOKETTE TOMORROW, I AM LOOKING FORARD TO GETTING STARTED WITH IT. DURING THE BREAK-IN WILL IT HURT IF I LET IT RUN FOR 12 TO 14 HOURS, I WANT TO START IT BEFORE I GO TO WORK,AND STOP IT WHEN I GET HOME, SO IT WILL BE READY TO USE THIS LONG WEEKEND.ALSO SHOULD I TAKE THE RACKS OUT OR LEAVE THEM IN. I CAN'T WAITE TO GET THE GRILL FIRED UP. I HAVE A 4 DAY WEEKEND COMMING UP MAY COOK A PORK BUTT AND A BRISKET!! I AM SURE THERE WILL BE MORE TO COME AS I GET THINGS GOING.

You can break it in and let it run that long and it will be fine. Leave everything in so it gets seasoned, including the racks.

HAD SOME OTHER THINGS COME UP AND WAS NOT ABLE TO GET OVER THERE..SURE WISHED I COULD HAVE. I WILL BE WATCHING FOR ANY OTHER THAT COME UP IN THIS AREA..LOOKING FOWARD TO BECOMING A CS OWNER. I LOVE TO SMOKE Q.

You are going to Love your new smoker! I've made, bought and borrowed almost every other type of smoker and the CS is the best!

I think so I have read a lot about it in the past few weeks, it looks small, but I think it will do all I need for the time being. I don't know what to cook first a butt or a brisket.

Butts are more forgiving, I'd do that first. Go with Pork Butt 101 for some starts and then look through the Pork Butt archive.

I just picked it up, I am going to season it tonight or tomorrow. With a little luck I will be cooking on it tomorrow night. :-)
