I ordered my new smokette with cart yesterday .I'M so excited i can't wait delivery on monday or tuesday of next week.Any sugestions from you smokin experts about seaoning and my first dish i should smoke.Any secrets from the gurus of "Q" iam your young aprentice teach me master jedi "Q"

Hey Harley,

Congrad's on the purchase. I just ordered my 55 and sold my Smokette this week.

I would Season it as per the instructions and then try some Chicken breasts, they are fast and really easy to do, AND very tasty if you use the CS chicken rub. I think i do mine @ 225 for about 45 minutes to an hour, and cook them until they are 160 with a polder. only use 1 or 2 small pieces of wood, and no peeking! I would maybe start with only 1 piece of wood for starters to get a feel for it. Search the board, or look in the poultry archives, you'll find lot's of info in there.. Let us know how you make out..

I'm a newbie too and this forum gave me the info to produce excellent Q. I've done ribs twice, whole chickens twice and one brisket. I just wish I hadn't told everyone I've served the stuff to, how easy it was. I should have let them think I slaved hours and hours Smiler

Harley - I'm a twin (the larger of the two ) and I do have a 92 Dynaglide custom...rode it to Sturgis from OK in 93...waiting on a white Ultra Classic 04...I hope the new white paint is as nice as the pearl white.

Welcome.

And as for secrets, I don't think there are many left, we've just about told all of them. Okay, maybe my recipe for finishing sauce, but that's about it.

Pick a topic, what's you're favorite food. Start with that.

Depending on what you pick, I'd read through the Forum Archives. First the Owners Archive, then the "best of" Archive, then on to the individual topics.

You can also do a "search" for a particular item.

And of course, go to my 101 series for some basics.
