Well, it finally happened,

I was at the used equipment place today trying to sell a couple of pizza deck ovens. The guy wouldn't buy at my price so I started looking around for something to trade him for. Just for kicks I ask the guy if he has any smokers. He says that he has a "little" smoker and walks over to a sm-055. It was his lucky day because once I saw the smoker, the asking price on the deck ovens dropped dramatically. Long story short, I am the proud owner of a slightly used sm-055. Need to clean it up, reseason it and hopefully will have my first brisket in by tomorrow night.

It feels awefully good to finally be in the club.

You have a 144 posts so it's about time you got a smoker. You should be an old pro with your 13 months as a forum member under your belt. Let us know how your first smoke went.

Very Nice! Left it on an overnight smoke at the restaurant. It was 195 when I came in in the morning so maybe a little dry but tender. Can't believe one chunk of wood imparted that much flavor. Used Hickory b/c that's what I had laying around but I will definitely need to find some pecan or oak to lighten the flavor a little. Overall a success. Doing Spares today and will be smoking 4 brisket overnight for the restaurant. I am in heaven.

Guilty as charged. I'm the guy with short brown hair and goatee. A little heavy in the middle (but currently working on that). Drop in and say hi next time you're up that way. You and everyone on this forum have helped me tremendously. The least I can do is buy you a piece of pie. I'm not sure whether my Q is good enough yet to brag about but not many restaurants can make a pie like I can.
