What temp should I take a flank steak up to. I was planning on taking it up to around 170 or so. I was woundering if I should take up to the 190 range like you would a brisket, or will it be to done.

Usually,I cook marinated flank steak hot and fast.

There isn't much internal fat to render.

Around 135� and slice thinly across the grain.
