I finally picked all my jalapenos last night. I couldn't wait any longer. Out of about 40- 50 fruits I only had 20 that reached the red stage.

I looked up Andi's method way back from 2001. It's located in "The best of Archives" for those of you who want to look it up. Just go to the advance search option and type "chipotle" in the word/ phrase box and type "Andi" in the author box.

Anyhow, I took the lil red fruits and put 4 slices in them down almost the entire length.

At 7:30 PM I put about 2 oz. of wood in the wood box and set the smoker at 150.

At the 5 hour point I opened the door to let some of the moisture escape and to add 2 more oz. of wood.

At 7:30 this morning I opened the door again to let more moisture out, but did not add anymore wood. They were dried anywhere from 40-60% depending on their size at the start.

Now sometime between lunch and the finish of the work day they should be fully dried and smoked.

I'll try to remember to post a pic or 2.

BTW, I used apple wood because its what I had.
