Greetings from usually sunny Sherman Oaks, California. Hoping for a great season of grilling and smoking. A new Infrared grill is coming to live in our home this week- - -and as of yesterday, I have ordered the new Amerique Cookshack smoker. Hoping to learn to soar with the Amerique, and excited here beyond words. Also hoping that the Cookshack forum may become "family" to me.

we just placed the order for a smokette a half hour ago! hopefully it won't take too long to get here! what should be our first venture I wonder....suggestions?

ChefJeff - I work in Sherman Oaks, live in Calabasas. And yes, it is raining once again. I have been using a Cookshack smoker for 3 years now. Let me know if you want some ideas. Good luck.

skool,
just season the thing 1st and then try a picnic or pork butt. they are forgiving and should make for a great introduction. oh that and spend a buck and get a composition book. log down weight of meat,cooking temp,time to completion and anything else you want. trust me if you do that after 3 months you can really cook and see any problems before they the are problems

Congrats on your Amerique...I would love to get my grubby little paws on one of those, but I just bought my SM50 a couple of weeks ago, so the wife won't buy into the "but my other one is sooooo old" and "I really, really need it" excuses yet!
