Hi all, Wanna try to smoke some Buffalo Burgers. Have smoked Beef and really like em. Use lean beef, and they turn out very good. Have searched the forums and there doesn't seem to be much on buffalo. Being there is not much fat content in Buffalo, I was wondering if it dried out.
Possibly put water tray in smoker, or maybe some bacon on it. Have grilled them before and ya gotta cook slow. Just wanted to try in smoker. Maybe should just lower cooking temp.
Any suggetstion are appreciated.

Try a pat of frozen butter,or a small chunk of ice, inside each one.

Cook no more than about 155� internal.

I'd cook at same temp as you do lean beef.

The butter thing sounds good or possibly a piece of bacon was thinking, will let know how it works. Gonna do it tomorrow

How indoctrinated can I get? When first looking at the first sentence I fathomed a big juicy hamburger with hot sauce all over it served with celery and blue cheese dressing - a new twist of buffalo wings. Big Grin I finally understood. However! Real buffalo does sound good, but never seen one here in Cracker country of Florida. I guess they are real live animals and not just a picture on the nickle.

Yes, we do have real live Buffalo here in Colo. My girl friend knows some people tha own a Buffalo ranch. We have been in eating it from time to time. It is rather pricey, however it tastes great. Is a nice treat once in awile.

Anyway, back to subject. I smoked 4 Burgers yesterday and they were outstanding. They were 1/2 lb. patties about 1/2" thick. When making them I could tell there was alot of natural juices in them. Not fat, but juice. So I decided not to put anything else on or in it. except some season salt. Cooked in a smokette at 250 degrees for about 1 hr. 15 min. probe read 140 degrees. They came out totally awsome. Were not dry at all. They were a bit more red inside than beef, but that is not a proble for me. Buffalo tends to be that way anyways. Will do them again for sure.

I buy organic American bison (buffalo) at my health food store. It tastes great. I did a Pike's Peak roast in my crockpot that was fabulous. It is in the health food store because it is just about the healthiest meat there is. I don't have the comparative nutritional information at hand, but you can probably look it up and order it online. (Is there anything you can't buy online?)

I haven't smoked it because it is so low fat, but after reading the post above, I think I'll give it a try. Maybe throw a couple of strips of bacon on the roast?
