"Got any Brown sugar"

If you're cooking in a Cookshack, there's really no reason to mop. It's a moist cooker and doesn't need the moistening effect of mopping. There are two other real good reasons not to mop in a CS.

1. Opening the door lets out heat thereby lengthening the cook time.

2. Mopping can wash off some of your rub so if you don't need to mop, it's best you don't.

If you want more bark add more brown sugar to your rub, or try honey??

I'm with Baltimore on this one, mopping won't add as much as adding sugar to your rub. I use turbinado to keep it less dark, brown sugar and AJ will tend to darken more. You can also use Light Brown Sugar.
