My wife tells me I am in the early stages of "old-timere disease". Says I can't remember @hit.It all started with my last smoke when I neglected to put foil on the smoker box. I solved the problem by writing down the following checklist for my 008.
1) Foil smoker box and bottom of 008, being sur to cut out a hole for the drip pan.
2) Apply cooking spay to rack snd rack holders
3) Put temperature probes through vent hole.
4) Place drip pan under smoker.
5) Place cooking items in smoker.
6) Insert probes
7) Plug smoker into electrical outlet.
8) Set desired temperature
9) Set it and forget it. It's done when it's done.
10) Don't procrastinate. Clean up ASAP. Big Grin

Because of line #11 I can see why you guys like the slow cooking process; now it all makes sense.
