Have to baby sit my two wonderful grand daughters. It looks like hot dogs for them. One is 5 and the other is 2 1/2 years old. My wife will not eat anything other than what they eat. Well I hope I don't get sick on my worlds greatest BBQ RIBS cooked in my 008. I guess I could invite someone over to help, but I don't think there would be enough for others since I can only smoke just two slabs. Sorry!

My son wants subways, so I'm going to buy a 3-foot long bun, then make our own sub (all the kids can make their own sections).

Also will have ABTs, queso dip (with Rotels), and Jones soda to drink.

pork butt the day before, reheat for sandwiches. ribs, brisket and a couple beer can chickens the day of. bbq smoked beans, potato salad, stuffed mushrooms and stuffed jalapenos. lets not forget the refreshments... should be a good party. i will be at a friends in vegas, i am bringing my cookshack with me. im sure he'll have to order one after we cook in it all weekend.

I'm doing a couple of butts. I'm also going to try some of the interesting side items I've seen on the board, like those portabello 'shrooms and the stuffed b'fast sausage. I've seen a couple of references in other posts to smoked deviled eggs. I'd like to try some of those too if someone could point me to a recipe.

I live in Germany and the game comes on at 0200 local. OUCH!! Also, my son has to get up at 0615 for school and there is no way in the world my wife is going to let me sleep in. The good news is they will show the game twice (yes Uncle Sam and the American Forces Radio and Television Network)and I can watch it Monday night at 1900 local. I hope to have some ribs for the second showing of the game.

well the boss gave me my marching orders for this weekend so i will be cooking wasabi chicken wings with lime glaze for her. for me as much as i want to do something morrocan i am making a big old meat loaf to smoke along with the wings.

Here's what I came up with for "Smoked Deviled Eggs"


"We also like some chopped smokey bacon or chopped smoked shrimp in the yolk mixture.

We have found that by getting the smoker smoking, attempting to stabalize the cooker temp. down around 190�,and only leaving them in the cooker about 30 minutes we get good smoke flavor,good smoke penetration and a tender egg white.

Overcooking the eggs can turn the white quite rubbery.

We also learned a trick from Stuart,about taking the bitterness out of some mesquite cooks.

Start the empty cooker smoking and let it go,until the yellowish smoke turns white or clear.

Then, add you eggs or seafood.

Below is one of the winners from the latest contest,as a guide.

Mike Sevier's Smoked Deviled Eggs brightened up our day. Fix these for your next potluck and watch the smiles. Mike wins a $100 Cookshack gift certificate.

SMOKED DEVILED EGGS

6 eggs
� tsp. cumin
Vidalia Onion Relish

3 Tbs. bread and butter pickles, diced
� tsp. salt
Mayonnaise to bind the mixture, about 3 Tbs.

In a 3 quart saucepan, cover the eggs with 1� cold water, bring to a full boil, cover, and turn off the heat. Let sit for 12 minutes, remove eggs and plunge into ice cold water to cool. (Really cold water makes peeling easier. Key to boiling eggs, lots of water and a roomy pan.)

When eggs are cool enough to handle, remove the shell. Tap the egg on a hard surface to start a crack then roll the egg around using light hand pressure to fracture the shell all over. You see how it works once you start. The big end is where the air gap is, easiest to start peeling there.

Put the boiled/peeled egg in the smoker. Spray Cookshack Seafood Grill or equivalent with non-stick spray. Smoke-cook for 45 minutes at 225 degrees F. Remove from smoker.

Halve the eggs and scoop out the yolks to a mixing bowl. Break them up with the back of a fork. Blend the yolks with cumin, cilantro, diced bread and butter pickles, and salt. Toss lightly with mayonnaise. Divide the filling into the egg halves, grind on some whole black pepper, and chill.

You may substitute sweet pickle relish for the bread and butter pickles."

When you post recipes, you might post them in the recipe forum with a pointer from here pointing to there.

Why?

Well, when the moderator moves the SB posts in a few weeks, I "miss" these recipes sometimes.

Well, I'm eating my friends food at my friends house, and drinking my friends beer (better be cold or I'm leaving)....;- ) Oh, I'll show up with my customary smoked half a salmon, so good it'll make you slap yo' momma! Go Stee....hawks.....I'm just hoping for a good contest. Enjoy the game everyone!!!!
