I just got my model 55 in, and it looks great. I can't wait to use it. If anyone has any suggestions, recipes etc., bring it. Especially smoked salmon recipes.

mountain man, did a search but could not find the recipe for jim minons(smoken or tom will correct me on that spelling and direct you too), the wife and kids like it alot. the hi mountain site have some good brines also. paul

Hey Mountain, welcome to the forum. Once suggestion is to start with a couple of pork butts. Smokin Okie's Pork Butt 101 has the basics, and some recipes. Try the Eastern Carolina sauce/mop. Recent 'Open Forum' post shave more discussion on butts. It's an easy first good experience with your 055, which is what I cook on. As others have noted, it'll help season the CS further as your 1st cook.

Smoked Salmon sounds yummy, enjoy.

Welcome to the group.

Check out the seafood archive, lots of seafood variations there, lots of options.

Jim's Minion (check spelling spaerib) is a great friend and has a good starting recipe for salmon.

We don't have the recipe here, but we point to this place to get the details:
