Found a new site today and I have to say he has done a great job.

How to butcher a whole pig. Great diagrams and detailed photos.

It's difficult to see of lot of the cuts we talk about, but you'll get some good info here.

Start at the intro page and look at the links on the left.

I talked with him and he's "eventually" going to do a beef page also.

Now if I can just print that out and take it to my Vietnamese butcher and show them how to do Full Shoulders and Back ribs (don't ask)
