Did my first rack of lamb in my Smokette. We are big lamb rack fans but have always done them in the oven after searking in a pan. Tonite I decided to try in the CS. Info:
1.4Lbs Rack from Costco.
1.4 oz Pecan - cut into 4 pieces.
Put Olive Oil on the rack and used a Kosher Salt, Pepper, Rosemary, Thyme, Fresh Garlic rub on it.
Put in CS fat side up on highest rack setting.
Set CS to 235* and cooked to a 140* internal temp (only took approx 1 hour). FTC for 20 mins. Best Lamb rack we have ever had. Next time I may put on the grill for 1-2 minutes each side or brown in a pan - to get a little more of a crust that we like. Gotta say CS are the absolute best and this forum is Awesome!!!
