Just to get my practice in I picked up a 5.25lb Select Prime Rib, rubbed with Dizzy Pig Cowlick and Cherry for smoke. Set at 230* a little over 4 hours until it hit 135*, I turned the Smokette down to 150* until I reached an internal temp of 142*, let it rest for 10 minutes and had a slice or two! My taste tester (son) declared it had too much smoke, which I like but will use less next time. Sliced it up for French Dips tomorrow!
This was an easy cook and now that its in the books, I'll be ready next time!

That looks awesome. How does the cost and quality compare to a "USDA PRIME" cut? My wife will not let me...er, doesn't like when I spend that much on Q. Can the select rib roast be purchased in most stores?

It is pretty rare to find a Prime standing rib roast.

Those folks that sell them,often dry age and air ship.

Most major grocery chains,and Sam's/Costco sell choice standing rib around the holiday .

The stores are advertising them for about $6/lb this week.

Ribdog buys some "better" choice,or maybe herford from fresh market for $3-$4 more/lb.

Lobel's is a major purveyor of dry aged.

My mistake! This was a Rib Eye Roast not a Prime Rib Roast. $4.47lb but it still made some fantastic French Dip sandwiches. Sorry for my confusion!

You were right to begin with actually.

It's a little weird due to the grading system, but prime rib refers to the CUT and not the USDA grade. And yes, it gives us the silly name......prime prime rib. Big Grin

During the holidays this gets brought up so much it should be a sticky! Wink

No kidding! I was at Costco and looked at a Choice Standing Rib Roast and thought the price was 4.48 and it was the weight at $14.99lb!!!

I'm lost, a standing rib here (Albany NY) graded USDA choice is 6.99-7.99 lb.
Perhaps the label was in error?

That must have been a misprint. Should be about $6.97 per pound.

Purchased a 10.11# Aged "Choice" standing rib roast this afternoon that was on sale here for $7.99/lb, normally $9.99/lb. You can find stores that have them cheaper but not as good quality of meat. Can't wait till early Tuesday morn to get it in the AmeriQue!

Just be prepared for the price.

Folks, I've purchased many steaks from Kanasacitysteaks.com.... been very pleased and priced much better than others. They supply Prime and choice beef.. among other items. Take a look at their Prime Rib and Tenderloin Roasts..not bad prices.

Harlee- As a a rule of thumb, the first time I try a new meat I use 1/2 the Cookshack reccommended amount, esp with Mesquite as it tends to be strong and can give a "sooty" appaerance to the surface of the meat.

Also, esp with ribs I've found about 25 degrees LOWER setting and additional hour or so makes very tender, juicier meat. Coot
