Trying to season my new sm25 now per Cookshack instructions. 3 hrs in and oven temp display reads 88F even though set temp is 275F. I placed the meat probe into the oven to see what reading it would give . . . Went to 200F-High. I placed a bowl of water in as directions said, wood is smoking . . . Any guesses why the oven temp display seems to be way under actual?
