Just want to say Thanks to everyone here. I've enjoyed reading the posts and learning the art of smoking. Attached is our small but wonderful concession trailer...a 24 ft. car hauler converted. The "Smoke Master" (which I'm not) was insisted upon by my lovely wife. It's a simple trailer with not frills. Again, thanks to everyone for all your advice....

Man I did a Spring BBQ run, while the next door neighbor was here changing locks, replacing blinds and cleaning up I stayed outta his way doing two very meaty slabs of baby back ribs alla Johnny Triggs, a massive ambrosia salad and the Peach Baked Beans. WOW !! Him and his wife got a slab, a bunch of beans and ambrosia salad. Fantastic beans !! My ribs came out very nicely too. Thanks for the tip !!
